Pages are copied as they are, with their content and quality. Bookmarks (table of contents) and internal links that pointed to a deleted page are not carried over: check the final document if your PDF relies on them.
Yes, up to 1,000 pages. Thumbnails are rendered on demand to spare the browser's memory; on a phone, a very long document remains workable but slower to display.
